Describe your approach to teaching
My approach to teaching is to involve students as far as possible in the active process of grape-growing and winemaking so that learning emerges from practical experience and the involvement of all five of the senses. I want learning to be both memorable and fun.

What inspires your own work?
True learning happens when you engage the Hand and the Heart as well as the Head, and so learning by doing and being inspired to have fun are important principles that motivate my teaching, and make the acquisition of knowledge and insight seem effortless.

Justin will be joined by viticulturalist Luke Spalding on day 2 of the course.

Luke Spalding, an experienced viticulturalist based in the South East of England, blends data-driven expertise with hands-on application to champion regenerative viticulture. Over his 5-year tenure at Everflyht, Sussex, where he serves as General Manager, Luke has spearheaded the transition from conventional to regenerative practices. His focus on soil health rejuvenation and vine balance optimization has elevated productivity and sustainability.

Previously honoured as UK Vine Grower of the Year, Luke's commitment to innovation led him to explore Cool Climate Canopy Management and refine yield estimation methodologies. Regularly undertaking talks and workshops for vineyard managers and viticulture students, Luke believes in shaping the future of sustainable vineyard management through knowledge sharing and continuous practical improvement.
